Making pasta sauce today.
Tons of garlic and onion with peppers getting ready for a nice long simmer before I add in a bunch of meat.
LOL...I just have to like this post.. ^^^
My old lady always asks me why I never eat her spaghetti...
"'cause it takes you 10 minutes to make the sauce, it takes me four hours." (what I call "slow simmer")

My old lady always asks me why I never eat her spaghetti...
"'cause it takes you 10 minutes to make the sauce, it takes me four hours." (what I call "slow simmer")
I haven't made it in a while, but I make a mean Bolognaise sauce from scratch, about 6 hours from start to eating.

If you really mean "scratch"...10 pound raw tomatoes...pressure cooker.
I admit, I usually use canned tomato paste for a base and take it from there.
Add can or two chopped clams, a pound or two ground beef depending, onions, garlic chopped and squeezed, green pepper, assorted spices..
Yea, my spaghetti is Bolognaise..my old ladies is more Spaghetti O's or Chef Boy-ar-dee.

What I need is a good white sauce recipe. A real Alfredo..she likes it.

Raw Roma tomatoes cooked and run through a hand cranked food mill, garlic, onions, peppers, a bit of diced celery and carrots, even my pasta was made from scratch.
