Help with a Vanilla Custard recipe?

Hey All:

I always need to have this Vanilla Custard recipe in my juice rotation:

Vanilla Custard V1 CAP 7%
Cream Fresh FA 2%
Vanilla Bourbon FA 2%
Vienna Cream FA 2%

Thing is, I've kept the recipe unchanged since the first time I made it but would really like to tweek it some. Sometimes I can find this a bit cloying and heavy - I'd love to "lighten" it and make it more creamy without changing the essence of it too much.


Here's what I have for (non-fruit) flavors:

FA Chocolate
FA Cocoa
FA Coconut
FA Cookie
FA Cream Fresh
CAP Bavarian Cream
TFA Bavarian Cream
TFA Sweet Cream
TFA Dulce de Leche
FA Joy
FA Marshmallow
FA Marzipan
FA Meringue
FA Tiramisu
TFA Vanilla Bean Ice Cream
CAP Vanilla Bean Ice Cream
FA Vanilla Bourbon
FA Vanilla Classic
CAP Vanilla Custard V1
TFA Vanilla Swirl
FA Vanilla Tahiti
CAP Vanilla Whipped Cream
FA Yogurt
TFA Greek Yogurt

I appreciate any thoughts you might have.

Maybe try reducing custard and adding Vienna Cream and/or more fresh cream....I'm not no expert here so I'm not going to claim to know percentages. You should just experiment with it.

Just try cutting it in half.
You can also mix in VBIC, Marshmallow, Meringue, Vanilla Whipped Cream, Yogurt, Sweet Cream.
Or even Vanilla Swirl.
The FA Creams may be a little dry but smaller amounts aren't bad.

Yea i made a Cap Vanilla Custard v1 at 5% max vg 5mg 2 weeks ago by the pink color i can tell its too much flavoring it gets so over powering. I will go a year without vanilla lol. The stuffs good a 1% in mixes but straight im thinking next time im going at 2% 3week steep. It IS a steeper so less maybe better for flavor. It is for me.

Yes it's quite overpowering.
I've used it at 1% with several other Vanillas & Creams and it was pretty good.
Still had to steep it for a month.

I don't know why it didn't occur to me to just try cutting all the percentages back - here I am thinking add more, add more! :facepalm:

I am going to mix up a quick batch today at half the percents and experiment more over the weekend.

I personally prefer FA Vanilla Classic (Madagascar) over the spicier Bourbon to accentuate the vanilla in CAP VCv1. That TFA Dulce plays very nicely with CAP VCv1 too. I use it at .5% along with 6% VC for a nice flan/creme caramel.

Heabob - Following your suggestion, I cut all percentages in half. It's a little low on flavor but it's only had a couple of days to steep so I'll see how it develops. It's much closer to where I'd like it to be though.

I also made eight other test batches using the halved recipe and just some really simple experimenting with the flavors I have:

FA Chocolate 1% and FA Cocoa 1.5%
FA Coconut 1%
CAP VBIC 1%
FA Cookie 1%
TFA DDL 0.5%
FA Joy 1%
FA Yogurt 1%
TFA Greek Yogurt 1%

Each line is a different batch.
I'll give these a week or two before I break into them.

Typical ranges I've used in recipes with those flavors:
FA Chocolate 0.5-1.5%
FA Cocoa 0.5-1.5%
FA Coconut 0.5-2%
CAP VBIC 4-5% usually
FA Cookie 0.5-4%
TFA DDL 0.5% (however it's one I'm not real crazy about, just prefer using TFA Caramel Clear instead)
FA Joy 0.5-1%
FA Yogurt 1-3%
TFA Greek Yogurt 3-5%

Most of these flavors you won't get very much feedback when used stand alone tho, well except for the Chocolate & Cocoa that is.
You might taste the Cookie at 2-4%.

My current recipe for vanilla custard is basic and tastes great. I don't generally like a high % of flavour, but CAP VC at 10% isn't too much IME. I could do 7-8% if I had to, but not 1-3% unless the VC was a light background flavour.

Capella's Vanilla Custard (either V1 or V2) - 10%
Flavour West Graham Cracker - 1%
Lorann Cotton Candy - 2%

Might try adding 1-2% of Vanilla Bean Ice Cream instead of GC and I like CC for a bit of sweetness, but again, not 100% necessary.
