What's for dinner?

Got this stir-in sauce to try out, seems fun.
It's mostly organic and has decent ingredients.


But, when I tasted it, it's just too bland. So, I added freshly ground Cumin and some garlic/onion powder.
It also is way too mild for my taste,. This'll fix that...


Fried up some hamburger and used the stuff...turned out pretty well.
Got some jasmine rice and red beans in the fridge, some cheese and a tort. and we're good to go.

Steak with shrimp cream sauce and roasted potato

Large pasta sea shells, stuffed with ricotta, mozz, crab meat, and spinache. Baked in a pyrex casserole dish in home made 4 cheese Alfredo sauce. Micro greens with simple lemon and evoo dressing. S&P.

Turkey burgers (white meat and dark meat versions) baked bacon and cauliflower mock potatoes. No bun. Salad and avocado.

I make a killer Tabouli salad. On a pita and an extra bit of lemon. Outstanding!!
Nice! I’m still learning a lot about Mediterranean cuisine and technique. I mostly cook French, Italian and Hispanic; but, am loving learning Mediterranean!

Speaking of spices, if you've never smelled freshly-ground Cumin you're really missing out!
I get it whole from my Mexican store and grind it up at home...omg the smell is insane. Not the usual smell you get from a pack of Taco Seasoning, I guarantee ya.:)

Incredibly powerful stuff too like this. it does not take much.

Oh Yeah!
I Use a mortar/pestle or a coffee grinder to make my spice blends.
It’s one of those small things that make everything taste just “that” much better. That and actually toasting and cooking the spices rather than dumping them in at the end.

mini lamb shoulder portions, with some root veg & oyster sauce & honey. Foiled up and in a low oven, until it smelled cooked

DIY Hoagie for game-watching. :)





It's got bologna, roast turkey breast, sharp cheddar, lettuce, dill pickle, El Pato hot peppers, red onion, Hellman's mayo & Dijon mustard, a sprinkle of garlic pepper, my Reaper powder, and a drizzle of EVOO. All on a S.F. "Outdoors" bun.

Did you ever work at an Olive Garden?
You seem to make some of their dishes. (I worked there awhile myself, long ago)
That was my first restaurant job back 93. Working there gave me the bug. Since there I’ve worked at Delmonico,Chef Proudhomme’s kpauls, and an Italian fine dining place called Tony Angelo’s.

I don’t use any of olive gardens recipes, since most of it is canned. I usually use my own variation from kpauls or tony Angelo’s, unless it’s steak... that’s Delmomico’s
