Prefer crayfish myself.
I do too, but prefer it when I have them freshly boiled. It’s hard to get the tamale up here.

It's good with shrimp no doubt but better with crayfish .

Made grilled chicken with Italian seasonings and Louisiana Hot Sauce tonight. A spur of the moment last minute idea~! As the Cajun Chef used to say Ooh Wee Good~!

I wish I was that good at Cajun cookery, but I ain't.

Damn good memories though.
